Coffee & Cake - Cinnamon Apple Quick Bread With Apple Cider Glaze Recipe

This week, we baked NYT’s Cinnamon Apple Quick Bread with Apple Cider Glaze and it did not disappoint. Fresh apples, ensnaring aromas of cinnamon and nutmeg, and succulent cider glaze on its top—it reminded us of coming home to mama Rüya's apple bread on brisk Autumn mornings. 😋

Enjoy this cake with coffee.

Ingredients

2-¼ cups Flour
¾ teaspoons Salt
1 teaspoon Baking Soda
½ teaspoons Baking Powder
1 teaspoon Cinnamon
½ teaspoons Ginger
¼ teaspoons Nutmeg
2 whole Eggs
1 cup Brown Sugar, Packed
2 Tablespoons Molasses
½ cups Butter, Melted
½ cups Unsweetened Applesauce
½ whole Apple, Grated On A Box Grater And Then Pressed With A Paper Towel

* For the Glaze *
1 cup Confectioners Sugar
2 Tablespoons Apple Cider

Preparation

  1. Preheat oven to 350ºF.
  2. In a large bowl, whisk together the flour, salt, baking soda, baking powder, cinnamon, ginger and nutmeg. Set aside.
  3. In another large bowl, whisk together the eggs, brown sugar, molasses, butter, applesauce and grated apple. Add wet ingredients to dry and mix until just combined.
  4. Scrape batter into a greased loaf pan and bake for 1 hour 15 minutes, or until a toothpick comes out clean. Let loaf cool completely before glazing.
  5. To make the glaze, mix together the confectioner’s sugar and apple cider. Drizzle over completely cool loaf.
